RECIPE: FIESTA CHICKEN

If you’ve been on Pinterest more than five minutes, I’m sure you’ve seen this recipe circulating: Fiesta Chicken. And, if you’re like me, you’ve pinned it and revisited it a few times, wondering whether it’s really that easy or if there’s something you’re missing (hint: it’s really that easy). Our introduction to Fiesta Chicken came from a lake trip with some of our best buddies and we tried to keep it to just crockpot meals the whole weekend (fun experiment if you have more than one crockpot!), and when it came time to pick my dish, I chose the Fiesta Chicken as a wildcard. It boasted straightforward instructions, six ingredients (!), a variety of variations, and the ability to dump it all in the crockpot and leave it to enjoy 8 hours after you set it all up. Folks, it just can’t get easier than that. And I followed the basic instructions, didn’t embellish, and it made about 9 servings that kept us cozy and full all weekend.

It’s easily one of the simplest and most delicious recipes I’ve ever made, so I thought I’d take a second to share it with you! I’m also sharing two variations that have a little different take on the same delicious recipe so you have some options to choose from!

Each recipe feeds four depending on how hungry you are – this is a hearty meal!

ORIGINAL RECIPE

This is hearty, yummy, and has a little kick -perfect for a cold day!

You’ll need:

  • 2 large chicken breasts, frozen or fresh
  • 1 can corn
  • 1 can black beans
  • 1 can regular Rotel
  • 1 8 oz block of cream cheese
  • 1 packet Fiesta Ranch seasoning

To make this recipe:

  1. Place chicken breasts in the bottom of the crock pot.
  2. Add black beans, corn, Rotel, and cream cheese (in block form) on top of chicken breasts.
  3. Sprinkle Fiesta Ranch seasoning over top.
  4. Cook for 4 hours on high or 8 hours on low.
  5. After 4 / 8 hours, shred chicken with fork, incorporate ingredients well, and serve. (We like ours just plan in a bowl, but you can serve with chips or over a bed of rice if you like.)

CILANTRO LIME VARIATION

This variation is lighter, a bit sweeter, and has the taste of the Mexican food favorites you love.

You’ll need:

  • 2 large chicken breasts
  • 1 can black beans
  • 1 can white corn
  • 1 can cilantro-lime Rotel
  • 1 8 oz block of cream cheese
  • 1 packet Fiesta Ranch seasoning
  • Optional: juice of one lime, white rice, avocado

To make this recipe:

  1. Place chicken breasts in the bottom of the crock pot.
  2. Add black beans, corn, Rotel, and cream cheese (in block form) on top of chicken breasts.
  3. Sprinkle Fiesta Ranch seasoning over top.
  4. Cook for 4 hours on high or 8 hours on low.
  5. After 4 / 8 hours, shred chicken with fork, incorporate ingredients well, and serve. To switch things up a bit, add the juice of a fresh lime over top, add sliced avocado on the side, then serve over a bed of white rice. Enjoy!

SPICY VARIATION

This is not for the faint of heart! Cut the heat with a little lime juice if it gives you heartburn just reading about it.

  • 2 large chicken breasts
  • 1 can black beans
  • 1 can Mexican corn
  • 1 can spicy Rotel
  • 1 8 oz block of cream cheese
  • 1 packet Spicy Ranch seasoning
  • Optional: Fresh jalepeños, taco seasoning, and spicy Jack cheese

To make this recipe:

  1. Place chicken breasts in the bottom of the crock pot.
  2. Add black beans, corn, Rotel, and cream cheese (in block form) on top of chicken breasts.
  3. Sprinkle Spicy Ranch seasoning and a generous couple tablespoons of taco seasoning over top.
  4. Cook for 4 hours on high or 8 hours on low.
  5. After 4 / 8 hours, shred chicken with fork, incorporate ingredients well, and serve. To switch things up a bit, add shredded spicy Jack cheese and roughly-chopped fresh jalepeños over top. Enjoy!

PS: No pics because we ate it too quickly, but we made Fiesta Chicken for dinner tonight! It’s a staple in our house!

  1. I have made this, omitting the corn and beans, and served it on buns with chips. Delicious flavor ….great hot sandwiches. You are right…it is unbelievably easy, but oh so tasty! Love your blog..xoxo❤️
